- Cluster bean is an annual legume. These beans are the smaller and flatter relative of the regular green beans. Cluster beans are very common in India, especially in the regions of Andhra Pradesh and Maharashtra. Cluster beans remain fresh for at least four days when refrigerated. Wrapping them in plastic will trap the moisture that will hasten spoilage.The beans have a slim and extended body with tiny pods. Cluster beans are best when they are available fresh and tender. As they mature, it becomes woody and hairy. Fresh or mature beans require topping and tailing. The end of the bean has to be plucked removing the thick thread. This makes the cooking faster.
Tender cluster beans are consumed curried, steamed, boiled or fries. These beans are the smaller and flatter relative of the regular green beans. Unlike the green ones, cluster beans have a slight bitter taste, which is toned down while cooking by adding grated coconut, tamarind or jaggery. Cluster bean seeds are dried and grounded into guar gum. This flour is used as thickening agent instead of gelatin in ice-creams, cheese and sauces.
